Rava kesari| Sooji Halwa


                                            Rava kesari is a popular and delicious south Indian sweet that is often made in many families for festival occasions or special days or during family functions. It is offered to gods as naivedyam in many regions of India. It is a quick sweet recipe that is made with only a few ingredients like semolina, sugar, pinch of kesari and ghee. A beginners recipe with and needs no expertise.

              INGREDIENTS

      Semolina / Rava / Sooji: 1 cup
     Ghee: 1 cup
     Sugar: 1 1/2 cup
     Water: 3 cups
     Saffron / Orange food color: a pinch
     Cashew nuts: 10
     Raisins: 10
     Almonds: 5-6 sliced
     Cudpahnut / Chironji: 1 teaspoon
     Green cardamom powder: a pinch


                                    METHOD
  •  Heat a pan, add little ghee and fry cashew nuts, raisins, Chironji, almonds separately and keep it aside.
  • Add Remaining Ghee, add Rava and fry for few mins until color changes slightly.
  • Boil 3 cups of water separately.
  • Then add boiling water to Rava slowly, mix it well without lumps simmer and cook.
  • After all the water evaporates, add sugar, mix it well and cook on low flame until Rava starts to leave the sides of the pan.
  • Add cardamom powder and saffron, mix it well and off the stove.
  • Finally garnish with fried cashew, raisins, almonds, Chironji and serve.

TIPS: Serve with Puri. You can add milk to it.
