Sweet Potato Kheer| Shakarkandi Kheer| Moramgada Payasam
Sweet potato is one of the tuber
vegetable. They are nutrition dense food. Sweet potato kheer is a delicious sweet. It is allowed
during the Hindu fasting or Vrat. We can use sweet potatoes to make different
recipes like biscuits, kheer, and halwa. Since this vegetable has already
slightly sweet taste. We will be adding very little sugar.
SWEET POTATO
KHEER|SHAKARKANDI KHEER| MORAMGADA PAYASAM

INGREDIENTS
Sweet potatoes: 3 medium sized
Milk: ½ lt
Ghee: 5-6 teaspoons
Sugar: 250 gm
Almonds: 5-6 sliced
Cashew nuts: 10
Raisins: 10-12
Green cardamom: a pinch/ ¼ teaspoon
Saffron: a pinch (optional)
PREPARATION
METHOD
- Boil sweet potatoes until soft.
- Then peel of the sweet potatoes skin and grate it.
- Boil milk in separate pan and keep aside.
COOKING
METHOD
- Heat a pan and add little ghee (2-3 teaspoons), add almonds, cashews, raisins and fry till they are brown in color and keep it aside.
- Add remaining ghee to pan, add grated sweet potatoes and fry for 5 mins on low flame.
- After 5 mins, slowly add milk to pan and stir it well.
- Then add sugar to it. Mix and continue cooking for 3-4 mins.
- Now add cardamom powder and saffron to it. Mix and cook for a minute.
- Now check the kheer consistency. When you take ladleful and pour it back, you will see both will fall together, no more separation. This is perfect.
- Then turn off the flame.
- Finally add garnish with almonds, cashews, raisins.
- Serve hot or you can refrigerate for 1 hr and serve cool.
