KASHI HALWA
Kashi halwa is very tasty and is
considered as very healthy halwa. I have never tasted ash gourd before, when I got
to know about Kashi halwa I was very eager to try this recipe. When I finished
making and tasted I was very impressed. The taste and texture of the halwa are so
perfect and now it has become one of my favorite recipes.

INGREDIENTS
Ash Gourd: 4 cups grated
Ghee: 6 tsp
Sugar: 1 1/2 cup
Milk: 1 cup
Saffron / Orange food
color: a pinch
Cashew nuts: 10 -12
Raisins: 10
Pista: 6-8 sliced
Green
cardamom powder: a pinch
METHOD
- Add
saffron in milk and keep aside
- Peel
the ash gourd skin and remove the seeds and soft fibrous portion from it.
- Now grate
the ash gourd and squeeze as much water as possible.
- Now measure
the grated ash gourd with cup.
- Heat
a pan, add 2 tsp of ghee and fry cashew nuts and raisins, keep it aside.
- Now in
the same pan, add grated gourd and fry it color changes ( light green to white).
- Add milk
to it and cook till soft.
- Add sugar
and 2 tsp ghee and cook till the mixture leaves the pan.
- Finally
add remaining ghee, cardamom power and mix well.
- Remove
the pan from the heat.
- Garnish
with fried cashew, raisins, and pista.
- Our Kashi
halwa is ready to serve.
- You can
serve hot or you can refrigerate and serve cool.
TIP:
- Serve with a scoop of vanilla ice cream. It tastes divine.
