PETHA RECIPE
Petha
is a popular Indian sweet. It is soft chewy, juicy and candy like. It is known
to originated in Agra
and hence the name Agra Petha. This is a easy recipe with only a few ingredients which are regularly available at our homes.
The Petha
can be stored in refrigerator for a few weeks, so you can comfortably make a
large batch and enjoy it whenever you wish. Ash guard reduces excess heat in
the body, increases energy and sharpness of mind.

INGREDIENTS
Ash Gourd/ Bhudidha Gumadikai: 1 kg
Sugar: ½ kg
Edible Lime/ chemical lime: 2 tsp
Kewra essence: 1 tsp
METHOD
1.
Peel the ash gourd remove seeds
and soft fibrous potion from it.
2.
Cut into large cubes.
3.
Prick each cube with fork or
with toothpick.
4.
Dissolve edible lime in enough
water and soak the ash gourd cubes in it for 4 hrs.
5.
After 4 hrs, drain water and
wash cubes thoroughly 2-3 times, so that no trace of lime remains.
6.
Take a vessel and boil enough
water and add cubes to it and cook till soft.
7.
Again strain the water from
cubes completely.
8.
Now add cubes in a vessel, add
sugar to it and place on high flame for few mins and then to medium flame.
9.
Add Kewra essence to it.
10. Cook the ash gourd cubes until
soft and transparent and syrup to three-thread consistency.
11. Finally remove the cubes from
the syrup.
12. Let it cool and serve.
